TD Manifold Gasket

Well I got the old torn gasket off OK. The new manifold gasket I got from Moss
has metal on one side only. My question is does the metal side go against the
head or the manifolds (or maybe it doesn't matter)? Is there anything else I
should do while I have the manifolds off? Thanks in advance.
