I'd be really interested in an answer to this as well.  I also have a 72 B
with carbs that were tuned by a specialist, along with all the proper timing
adjustments.  I always assumed that it was simply because the engine is old
and never fully rebuilt, reseated, de-coked and all that jazz, that the idle
is a bit chunky below 1000 rpm...
