Marc:

1)  What model SU's are you using?
2)  Just being desmogged isn't going to improve the
performance that much.  All you've eliminated is the power
drag of the air pump (1-2 BHP). This is especially true of
the LE.  To completely improve the power of the LE you need
to up the compression ratio, change the cam, enlarge the
valves, etc. using the specifications of the 1964-67
engines.
3)  My guess is that the carbs aren't rich enough.  Have you
verified that the carbs have the right jet and needle?
4)  You must learn how to set the carbs if you can't find
anyone.  That's how many of us learned, by reading a book
and trial and error.
