The temperature an engine runs at is controlled by its thermostat and its
cooling capacity.  In normal use the thermostat should never be fully open
and if the temp gauge remains within the normal range (typically  a very
small range on modern cars) this is obvuiously happening.  If the thermostat
ever gets fully open and the engine puts out more heat than the cooling
system can get rid of the temp gauge will rise.  Typically MGBs with
electric fans will run about mid-way between N and H in traffic, as the fan
cuts in and out, they should be close to N when running in free air.
Antifreeze is used for its anti-corrosion and non-freezing abilities, not
its ability to remove heat from blocks and heads, which is worse than plain
water.  According to the above site water vaporises at 539 calories per
gram, pure Glycol about half that.  If an engine is supposed to run hotter
then it will have to have a higher operating pressure or it will boil, no
matter what is in the system.

Some pre-mixed coolants e.g. ForLife contain even more additives that
indicate a combustion leak by a colour change.
