I would look at a fuel delivery problem.
Sounds like at full throttle your engine is using fuel just a bit faster
than it is being delivered from the pump.  Leave your foot to the floor and
you basically run out of gas.
Take your foot off the gas, and the float bowels fill back up and you are
good for a while.
Check your float settings and you fuel delivery rate.
Might be time for a new fuel filter.
