i know the trend in new motors is to run hot but 245 is not what i would
want to be running in a 400 sbc.
i would first put in a 180 stat-that would give your rad more time to
actually cool the water before it gets a new "hit" of hot water. i know it
sounds backwards but im pretty sure it will work. 
second-get/creat/find a shroud-big difference!!!  am assuming youre not
runnin the AC. if its still runnin that hot-get an aux electric. you should
be running at least a 3row rad if not 4. alum is too expensive and wont
stand up to the twisting youre gonna out on it with a panel. 
check timing to see if retarded(not you-the timing! =)

run your heater
buy an add-in sub-zero type addititve to run your water cooler/wetter... 
and get a 15+ cap-but not one that will blow your rad apart. also-a large
overflow tank will help your rad recover after a hard run-not just burp the
juice on the ground to be lost forever.

also-is your motor broken in yet? if not-i would be runnin it soft for the
first 500+ miles-not pullin a trailer! =)
