It sounds like the head (or block) has a very small, hairline crack between
a cylinder and the water jacket.  The expansion at higher RPMs (increased
heat) will allow water to leak into the cylinders, but stops almost
immediately as the engine cools a few degrees when you allow it to idle. 
(Been there)
