When the timing is too far advanced it will cause overheating.  I would try 
moving the timing back to about 8 degrees and see what happens.  I have a 
Weber DVG on a 1500 and that is about where my timing is set and it seems to 
run just fine.  Head was shaved as well to true it up.  It doesn't seem like 
the heater removal should affect anything if you have insured that the flow 
has been retained.  And check the thermostat to be sure it is functioning.


Also, instead of counting turns of the mixture needle, invest in an 
inexpensive dwell tach and use it to adjust the carb mixture for the highest 
rpm.
