For the brake calipers, braze a grease fitting to a piece of brake line and
pump them out with a grease gun. Use a block(s) between the pistons to
regulate the movement.
A bit messy but it works nicely, even on rusted lumps. Don't worry about the
grease, you can clean it out easily with brake-clean and air.
On really rusted calipers air generally doesn't work, you can't build enough
pressure.
