Okay.  Too many replies to respond to all of them. Here's some additional info.

1) I have a HIF44 SU on the car with no heat sheild. 
2) Radiator is in great shape. Must have been recently overhauled by
the PO as it looks
   brand new. 
3) Fan is a 6 blade aftermarket.
4) It never went hotter than 190F indicated.
5) It got really cold here this winter. I'm floating 4 balls with the
antifreeze tester.
6) The heater is out of the car. (Anyone have a blower shroud laying
around? Mine
   is broken off where it attaches to the bulkhead.)
7) There was no white smoke and the car runs great afterwards. No sign
of a blown
   head gasket.
8) Timing is spot on.
9) Yes, I have a /2
10) Here in Dodge City we don't have Mad Cow Disease - We have PMS.

Based on the great input from ya'll, here are my plans in the order I
will try them. When problem is fixed I quit at that point.
1) Drain and flush and go to water only with some "Water Wetter"
2) Nobody mentioned pressurization - I'll check that. Even a pinhole
leak makes huge
   differences.
3) Install an electric fan with interior console switch as well as
thermostatic switch.
4) Do I need a heat sheild for the carb?  Anyone else have an HIF44
installed on a 1275?
   What's your experience?
5) Hire an ice truck to follow me around....
6) Anything else?

One more question for the resident wizards....

I notice that if I haven't driven the car in a week, when I start it
up I get a cloud of oil
smoke out the tail pipe. If it has been driven recently this doesn't
happen. I think
someone on this list may be sneaking into the garage and pouring oil
into a couple of
cylinders when I'm not around......
