Hi Joey,

As others have said, you cannot bore the 260 cid to 289 or 302. 

First, start your restoration with inspection. You don't want to restore 
things that don't need restoring. There are lots of people on this site that 
can 
help you but no one out here can give you advice without knowing more about the 
car.
What does your father remember about the car when it was last running? If it 
was running, try starting it as your first step. If it starts. Hearing it run 
will give you and your dad all kinds of enthusiasm. However, there are several 
procedures you should go through before you try to start it. Find someone 
around you that knows something about engines to help you.

Second, decide what you and your father's ultimate goal is. Do you want to 
just get it running or do you want to spend several years and lots of money
