I have been told it can be red or black, just a preference I guess.

What color is the inside of the 8 in the chromed V8 emblems on the
fenders of a 57 GMC?
I know that the "pebbly" part of the V is red, but I've seen the
"pebbly" inner part of the 8 painted either black or red. Any opinions
(preferably backed with knowledge) out there on this subject?
