Jeff-

When you're ready to paint, remove everything possible.  This will allow the
body man to reach all of the hard to get at places and do a better job.  The
windshield unbolts easily, two nuts on the end of the posts.  Mine was
rusted into the brackets, but a little elbow grease, a few well chosen words
and it came right out.  Benefits of removing the windshield are 1)
repainting under the scuttle gasket and 2) easier to replace/repair the dash
cover (if you need to.)

I bought a tow bar kit from Pepboys for pulling my spit the first time I
moved.  Since the bumper was off, I bolted a heavy 2X4 to the bumper mounts,
rigged up some lights and pulled my spit behind my Jeep across town and
later from Texas to Ohio where it was eventually painted.  Never had a
problem.

One thing you need to be aware of is that you need to be sure that either
the drive shaft is disconnected from the dif (ideal) or that the tranny is
in neutral before pulling.  I met a guy that pulled a GT-6 from Oklahoma
City to San Antonio with the tranny in gear.  It destroyed the engine and he
had to rebuild it.  Not a happy camper.
