Off the top of my head, I would keep:

Clips of all kinds
  door panel clips
  brake and fuel line clips
  wireloom clips
  etc...
Oddball fasteners of all kinds
Heater motor
Wiper motor, arms, and mechanism
Hazard switch
Headlight switch
Guages
Relays
Steering column , (maybe the rack too)
Dash pads
Top frame
Axles and differential
Front vertical links and calipers
Lights of all kinds
Bulbs
Bullet connector thingies
Anything chromed
Bonnet latches
Glass
Seat tracks
Master cylinders
Door latches
Emissions equipment
Brake and clutch hard lines

I have 3 organizers full of various small bits from a parts car and I am
constantly finding things I need in them as I do maintenance on my car.
For the larger items in the list, I think it never hurts to have a spare for
these
things as they are usually either 1) NLA or 2) $$$.  All of this stuff won't
take up too much room to store either.
