Hi Rachel,
        I've had good results with Autoglym products. There is a vinyl
cleaner (green label) which is applied through an atomiser. This lifts out
the grime well when worked with a cloth - for inaccessible areas a
toothbrush can be a big help. There is also a "vinyl and rubber care"
product (yellow label) which is a more viscous liquid. You rub this into the
vinyl then polish it off - the length of time between application and
removal determines the level of shine. Both of these products have served me
well through several years now. I don't have any specific recommendations
for cleaning the wood of the dashboard, but for polishing it just use a good
quality household furniture polish (Pledge) and you shouldn't be
disappointed,
