Hi, Philip -
Yes, you can just pull the bullet connectors out of the socket to
disconnect the wires.  However, there are a couple of considerations first.
 Sometimes, if the metal part of the connector  that the wire bullet plugs
into is corroded, a piece will break off (they are very brittle).  If that
happens you will need to replace the connector.  
Second, the wiring harness out of the switch likely is attached to the top
of the gearbox just in front of the switch with a clamp.  If your plan is
to disconnect the wiring and remove the switch, then you will have to deal
with getting the bolt out of the harness clamp.  Third, you now know how
tight the clearances are.  You should consider how you are going to get the
wiring connected again if you get it apart.

Of course, if you just want the reverse lights to stay out, you can  remove
the bulbs.
