I use a blanking sleeve in the summer and do not bother to cap off the 
bypass hose, I just leave it in place.  It works fine in the Davis summer 
heat.

I only use the copper sandwich headgaskets and have had no trouble.(and 
thats with a turbocharged motor with 10lbs of boost).
