Rich, 
        You mean " Mr. old and rusty".

Jarrid, 
        Recommend that you get a new steel flywheel to go with
your new clutch.  Flywheels also have a tendency to fly apart
if they are old or even worse, old cast iron.
  
If you attempt to have a steel scatter shield bell housing fabricated,
 remember that you need precision machining done on the housing
 to align the transmission to the block and to the pilot bearing in the
 flywheel.
        Consider using a regular bell housing and wrapping it in
an explosion proof blanket normally used for drag racing with
 automatic transmissions.
        Also consider that you could re-enforce your transmission
tunnel with 1/4" steel plate around the area of the clutch.  This way
you would not need precision machining.
    I have no idea if either of these items would be legal for the 
class of racing you intend to do.
