   It seems to me that you might have a broken zerk fitting. The spring
that you see may be the spring that is inside most zerk fittings. Its
purpose is to hold that (nearly microscopic) ball at the tip pressed up
sothat the grease dosen't come back out. 
   If dirt or any small particlegets under this ball, it can hold it
partially open and you get oneof those slowly oozing, leaky fittings.
   If, on the other hand, the tipend gets smashed up (or hit) as they
sometimes do in u-joint yokes,or during a lube aplication, the end snaps
off and the spring hangs out. In either case replacement is necessary.
