body-off restoration

I am new at this restoration stuff, so excuse my ignorance. I have been
monitoring the site for a while and reading the catalogs etc. I have a '72
TR6 that the previous owners have kept in just enough shape to drive but it
now needs to be brought back to top condition if it is to last.

I have read about redi dip and "body-off"(is that the right term?)
restorations. The catalogs show all the various body components that bolt
together. When one pursues such a project is there a way to remove the body
as one unit or do you dismantle the entire shell? If it comes off as one
piece what do you do about getting to rust between the panels where they
all bolt together? 

I am having a hard time deciding exactly how to proceed. I have been
thinking that for this winter I might take off several small components,
master and slave cylinders etc., rebuild them and put them back on so that
the car is usable for next spring and summer. Then I could decide on the
body off restoration for next winter. Does this sound like a plausible
plan?

 I will be looking in my area to join a club as to meet others who might be
willing to share these kinds of tips with me (Vermont,New England area). In
the mean time does anyone have any experience with any useful books that
would help me with a complete restoration. I would be interested in a book
of techniques, not one which simply shows how the car should look once
restored.
