It _can_ be done, I've done it several times.  (Dern starter just never
decided to fail at the same time as anything else under the tunnel <g>) 
The only hard part is starting the nut on the upper bolt when you put it
back in.  That operation is a PITA (pain in the anatomy), and some
people have gone so far as to put a thread insert into the transmission
bellhousing to thread that bolt into.  However, I've always succeeded,
with perseverance and duct tape.
Two tricks that help :
1) After putting the upper bolt in place, snug up the lower bolt, so it
holds the starter in position.
2) Use duct tape to fasten the upper nut to a long, flat box-end wrench
(ring spanner ?)
