For the temp gauge, doesn't matter.  It works fine either way.

For the ammeter, answer depends on whether the car is positive or negative
ground.  Just hook it up, if it indicates charge when you know the battery
is being discharged (like turning the lights on when the engine is off),
then reverse the connections.
