Try looking at surface finish and flatness again, of both the heads and intake. Perhaps mismatch of angles or unloading of the water port area when torqued. I have found that Loctite "Form a gasket"

To add to Gribs account, I typically measure oil tem at the supply to the engine, (sump or tank) but water temp out of the engine. (water out). I think it is just preference and/or what you are used
