Oil temps in the 210-230 range are great. Best for power and the engines live long on it. I think I'd be a little slow to remove the cooler completely. Cover over or whatever, but at least you still

Oil cooling makes up quite a bit (i have heard 30%) of your engine cooling. You may see your water temps much higher with out the oil cooler. I tried my Spitfire without an oil cooler and it was over
