I usually use a yoga position called "embracing the carbs" for this. You're right, you can't really do it with either hand, BUT... If you lean over the engine from the carb side, run one hand behind

The general drill for installing the carbs and intake is: Install the manifold with out carbs and heat shield. This allows best access to the various nuts. Install the heat shield. Install the carbs.
