That sounds right to me, Cosmo. Another way to look at it : moving the jet higher in the carb body will lean out the mixture, so you are screwing the nut onto it's threads for leaner; unscrewing it

Yes, you've got the orientation quite right. If you lean out too much you will get overheating and perhaps pre ignition. FWIW I have found the best all round setting for performance all round includi
