You may have caused your problems. Is it possible that you restricted the header pipes or maybe created back pressure waves with the thermocouples?

I assume that the EGT probes are in the exhaust manifold... i.e. downstream of the combustion chamber. And you say you are measuring 1400 (F?) on hard running. So the burning gas temperatures in the

There is also the theory that gasses continue to burn after the exhaust valve opens. And, the header is more likely to hold heat than the pisons, block, and head which are water cooled and are like
