I'm trying to decide between stainless and zinc plated nuts and bolts for my restoration. If I use stainless, then I need to use lock tight on the threads when either the nut or the bolt is not stain

I would not use Loctite anywhere except on a few special component bolts. Correct. Zinc nuts and bolts come in grades. Buy them anywhere you wish. A good local source for bolts is the hardware store
