You ask about excess fuel pressure--what fuel pump are you using? SU carbs are happy with 2.5-3.5 psi, which is what the SU pump provides. Some other pumps pump higher pressures, too high for the SU,

I am using stock SU fuel pump in both cars. One other point I'm questioning - In some diagrams I see a gasket spec'ed for the needle's seat, and in others I see no such gasket. I have tried this both

My hypothesis is the float needle and seats are defective. Or, the floats aren't rising enough to stop the fuel flow. Are the fuel needles and seats correct for the carbs? Check to verify the needle
