The ROM suggests tilting the front of the car up 45 degrees, attaching 
the engine to a hoist and then lowering the car.

While this may make sense due to the rather tight fit, it seems a crazy 
course of action you are trying to dp this in your garage! Down right 
unsafe if you don't have all the necessary gear.

Looking for information form folks on alternative methods of removing 
the engine.

Don't do it!  By far the best way is to raise the car (use jackstands
located near the door hinges) and then using a trolley jack to support the
front subframe (K-frame) and another to support the rear of the
transmission undo the nuts holding transmission mount member and the bolts
holding the subframe and lower the engine out the bottom.  Once on the
ground resting on the trolley jack you can drag the engine out from under
the car.

The usual caveats apply: you must disconnect the usual wires and hoses. 
You probably should remove the alternator and air pump and the exhaust
manifold on that side, and you can either disconnect the front brake lines
or unmount the calipers and hang them with wire coat hangers (remember
those?).  And you must undo the three nuts securing the tops of the strut
assemblies on each side.  

But this technique is easier than trying to pull it out the hood opening
and puts the top sheetmetal in much less peril.
