In the FWIW column:

IMO the Red Ext. / Black Int. combination works well if the red is a "deep" 
red, that is more towards the blue part of the spectrum than the yellow.

If it's more towards the Yellow, then the Camel/Tan is definitely the way to 
go.

As far as the convertible tops, instead of a top that matched the interior, 
I would suggest a top that complements it.  That is, Camel/Tan Int. = 
Beige/Cream or Off-White/Light Tan Top.  With a matching tonneau cover for 
when the top is folded.

As far as the dash, since it is a 68 and not an earlier dash style, it may 
not be easy to change it's color and make it look right.  The latter style 
dashes "flowed" more into the center console column and the console itself 
such that changing the color of one may dictate changing the color for the 
other pieces.  A black dash and center trim pieces may still look 
good...especially against a lighter color carpet.

And carpet...I don't know that I'd be willing to put a light color carpet in 
a car.  My experience with a Light Blue car with matching carpet and a Met. 
Grey with Silver carpet is that the darker colors don't show every little 
smudge, while black and light colors DO.  So my vote would be to get a 
darker shade of the Camel/Tan color or a Grey color (which would coordinate 
with the chrome trim on the car).

But that's just my opinion.

If you do choose to change tops, what type of top do you currently have? 
Stay-Fast or OEM style Vinyl?  Has it been fitted to the car?  How much 
would you be asking?
