40-60psi is what I'd expect. 20-30pis at a normal idle (your idle isn't
normal). If the mechanic set the idle that high then I expect something
is wrong.

High oil pressure is unusual. If everything about the oil itself is
right then it would be caused by unusually tight clearances in the
various bearings and oil passages. Usually the problem with an older
engine is low pressure caused by wear of the oil clearances.

Did he change the oil? If so, he may have used a "heavy" oil, like
20W50. That would increase oil pressure. Also, there may be an issue
with the oil filter, but to have that be a problem the oil sensor would
need to be in the oil path before the filter and I don't know if it is
or not.

Since the idle is wrong the mechanic may have the carbs out of synch.
That may cause a lean condition on 2 cylinders, which would cause it to
run hot.
