I too had problems similar to this.  Everything was fine until I put in a
NOS Borg & Beck pressure plate.  The clutch didn't want to disengage until
the pedal was almost to the floor.  I also had a new racing clutch disk, but
it was identical to the old one.  Nothing else had changed, but I checked to
see if there was problems with the slave cylinder, rod, etc and found
nothing unusual.  I checked to see if the clutch was grabbing tightly in the
shop, and the permanent rubber marks in my shop floor show that it was.  I
ran the car that way for the weekend, it felt weird, but worked ok.

We had engine problems and took the engine, with the clutch assy to the
engine builder to get fixed.  When I got it back, I noted that they didn't
like the way the clutch went on, the fingers were depressed too far.  They
shimmed the pressure plate out from the flywheel about 1/16 inch and it
works and feels great.  We've now run 4 consecutive weekends with it and no
problems whatsoever.
