Hi Greg,
Everyone in the race engine business seems to have a different opinion
on this one!!
It seems that 0.080" is a good rule to stick with.
We found with the engine in AHX12 that 0.080" was pretty difficult to
achieve while maintaining 11.5 /1 compressions and 0.400" lift at the
valve, so we dropped that to 0.065". 
We have had the engine on a dyno at 7200 RPM and after that removed the
head to check. There was no sign of the exhaust valves having touched
the block. 
So maybe you can get away with 0.065"
