Tracy,
As for the exhaust manifolds, you are correct, they tend to "burn off"
-although there isn't enough paint (if sprayed) to cause much if any smoke or
smell.
What a lot of the more fanatical will do, is to have the exhaust coated with
any of several methods of high temp coatings -paint, ceramic etc, then paint
over it with the engine green. I used a baked on v.high temp silver, and where
the green has burned off, at least you don't get rust, or an obvious
contrasting color.
