Chris,

Do you take your car on a lot of short runs?  If so this (the moisture) is
probably due to the car not being warmed up sufficiently, and is not
completely drying out the moisture that condenses in the exhaust system.  The
black soot is possibly caused by the carburettors being a bit too rich, and
the combination gives you "wet black soot".  

Short runs will also cause your exhaust system to rust from the inside
quicker due to the moisture.
