Cooling question

Did anyone see that idiot driving with top-down in 50 degree (F) weather
yesterday? Oh yeah, that was me!
My question is this, on my '76 B the temp usually runs mid-way between C and
N.   Recently it heats up quickly and goes right to N and above.  It doesn't
overheat, but some spits out when I park after an extended drive. It's not
even hot yet!  Recently flushed coolant.
Do you think I might need a new thermostat? How can I test it?  Anything
else I should be looking at?
