The yellow tint you are seeing is from the relatively high percentage of nickel
present in austenitic stainless (up to 22%) The other grades have a higher 
chromium
content (up to 27%) which will cast more of a bluish tint. Also I was referring 
to
the reproduction parts being made from the less expensive ferritic steel, the
originals I believe were made from "the good stuff".
