Ruggles (or something like that) sells some shiny levers for that
purpose.  They used to advertise in SportsCar.

Plan B is to run the car up on a hydraulic lift that has an inline
pressure gauge.  (Getting the weight of the lift arms themselves and the
surface area of the lift piston wouldn't be too hard.  If you know your
own weight, just look at the gauge when you're standing on it and when
you're not.)

Plan C is to get a shifter kart instead.  At 385 lbs for kart and
driver, weighing yourself with and without the kart is actualy feasible.

One trick to weigh something with a scale that doesn't go up that high
is to have some sort of lever assembly:
