Mike,

Here's a quick thought -- What about some sort of 
"bracket on a hinge" on either side of the table
that mounts two casters.  Flip the 
bracket/hinge/casters down for moving, then flip up
 and out of the way when the table needs to be 
stationary?  Don't know how heavy your table is, but
 if you can lift it up a few inches while flipping
 the casters out of the way, this might work.

Also depends how mobile you want your table to 
be...but I guess if you wanted a highly mobile table
 you would just weld the casters to the bottom and 
be done with it :-)
