It turns out I committed a stupid mistake
I removed the oil cooler and blocked the ports instead of connecting port to
port
I only ran the engine for a few minutes so hopefully I didn't do any serious
damage

You have oil in the engine right?
My first guess is that the needle on the gauge is stuck.
Second is that there is big piece of dirty sludge in the tube from the engine
to the gauge.
Third you need a new engine.
Disconnect the tube at the engine and see if you get a good spurt of oil
coming out.
Check the gauge with a spare, if you got one.
Replace or blow out the tubing from the engine to the gauge.
