Well....

Oil pressure should be 60psi at 3,000
but seeing as the car sat for so long,
I would be thinking a sticking oil press.
reliefe valve (hopefully!). 

What's the idling oil pressure like?

You might also check the gauge against
another (mechanic's gauge?). Car has
been sitting awhile...line might be gunked
up, etc.

Oil Press. Reliefe Valve:
This would be
the big nut with a little "helmet" on it
above the fitting for the oil pressure 
takeoff from the block.

You want to open it up, pull the spring
and valve and spray the seat and all
parts with carb. cleaner. A new valve
and spring (www.MiniMania.com)
would not hurt either...inexpensive.
