I have a friend with a nice body shop.  They fix newer high end cars,
some that haven't been sold yet.  They use PVC for compressed air
runs.   They run somewhere between 150-200 PSI which is probably more
than your home compressor.
I don't know how big your shop is or where your runs will go but
Copper ain't cheap.
If you are going less than 100 feet I would just get a couple of 50
foot hoses and couple them together when you need more than 50.
If you must have some solid runs or some kind of manifold, PVC is way
cheaper and easier to deal with than Copper.  Surely Copper would be
nice, though.
I have some of the blue hose from Horrible Frait and it works well but
is a pain to wrangle when it comes time to uncoil it or roll it up.
