Stu Brennan published a table that gave the sending unit resistance at
various temperatures: http://www.corpdemo.com/tiger/techtips/gageohms.html.
If you're using the Smith's/Jaeger gauges, and the 10V "instrument voltage
stabilizer" then these are the numbers you need to see from your sender, in
order to get nominally correct readings. As far as actual overheating goes,
you can use the Tiger guidelines: If it's not puking then it's not
overheating. For breaking the engine in you may want to take it a little
easier on the engine, keeping in mind that you do want it to get around 190
or so.
