Thanks to everyone who replied to my request regarding the temp gauge.  I have 
a lot to check out now, and will report what I find out so others may benefit 
if they have the same problem.

BTW, some of you asked if the fuel gauge was "acting up" too.  Well, truth is: 
yes, but in the opposite direction versus the temperature gauge.  When the 
tank(s) are filled, it reads just about 8 or 9 gallons... versus the 11 it 
should read.  So, it (if anything) is reading low, not high as some thought 
might be the case if the voltage regulator was the culprit.

Just out of curiosity, does your fuel gauge also read high?  It could be
a failed panel voltage regulator, which would drive both high.  Ways to
test it are in my article.  It might be as simple as a poor ground on
the PVR, rendering it useless.  It's grounded through its mounting
screw.  Simply remove, clean the metal under it, and reinstall.

Also, if you have an ohmmeter, you can check the sensor, watching it's
resistance change as the engine warms up.  When my sender failed, the
temp reading was low rather than high, but YMMV. 

Chances are the gauge itself is ok, DO NOT try to adjust it's
calibration yourself.

I have determined with a fair amount of certainty that my water temp
gauge (Mark II original gauge, not sure if exactly same as earlier
Tigers?) is reading too high.  It shows a constant 205-210 when at full
temperature.  But, it never "boils over" (13# cap on overflow tank) and
does not otherwise "act" hot in any way.

This morning, we used a good quality laser/infra-red temp gauge and it
shows 190 degrees at the base of the thermostat housing (with the dash
gauge at about 210).  Checks at other spots like the radiator etc all
showed temps a fair amount lower than the 190 seen at the thermostat
housing (e.g. in 180 range).  I believe I am running a 185 degree
thermostat (brain fade).

I do not believe that the temp sender on the manifold is the original
sender.   In any event, assuming that I can confirm with a second test
(temporary install of another good sender/gauge) that the original gauge
is reading 20+ degrees too high, is the original gauge "adjustable?"
Or, should I be looking for a different (original style) sender?

Any tips would be appreciated.
