I have always used one of these overflow tanks to collect water from the
cooling system as it expands. I just use an old plastic quart oil container
with the transparent strip down the side so that I can check the level. Cut a
hole slightly smaller than the rubber overflow tube in the top of the
container next to the pouring neck and slide the tube in until it is lying on
the bottom of the container (you don't want it jammed against the bottom when
it is sucking the water back into the system). Put the cap on tight and make
sure you drill an 1/8 " hole in the cap to relieve air pressure as the coolent
overflows into the container. If you don't the container gets really big!
Fill the header tank completely and fill you new overflow about 2" deep. Then
you just drop it in betweem the header tank and the radiator.

For purist shows I just pull out the tube and remove the container; the tube
just drops down and the car looks stock.  Works perfectly.
