A lean mixture is more likely to cause overheating than a rich mixture.
The car should run cooller at high speeds due to increased air flow. 
Are you sure the radiator isn't blocked.  

You said that the engine was just installed.  Was it rebuilt?  A rebuilt
engine can run hotter than normal for a while -Of course, it still
shouldn't be boiling over.

In the US a single CD150 was standard on Spitfire 1500.  I believe they
switched to a single Stomberg in 1970.  So if you have to meet emission
regulations, it is probably best to stick with the Stromberg.
