dash & head

i would like to take off the flaky varnish on my dash and lightly sand the
veneer then re-apply varnish any tips... heat chemicals or ? to help remove
the old varnish?

will the stage 2 head from a later model spit fit the earlier model engines,
the head with the 4 intakes on an engine that had only 2 intakes? inquiring
semi mechanics want to know
