"Going to hardened seats is not necessarily required in all cases." When I had my engine rebuilt, I had read arguments on both sides, so I asked the engine guy. I was told that for a "street" engine that gets used for 3000 miles a year, there is no reason to install hardened seats. If you plan to spend time at high RPM, it's recommended.
