Very Simple, Lou-

The additional cooling space of the headlights is utilized by having them
switched on. Electrical cooling is necessary- an electrical harness in use
will create a certain amount of heat in the engine compartment, and, when
you switch the headlights on, it allows hot current to flow through the
headlights which are cooled by the airflow over them, very much like a
radiator. This electrical cooling affects the engine bay temperature, and
therefore the engine as well, thus the 25% temperature drop.

That or there's something screwy in the electrical system, but I would never
expect something like that in a British car, being Lucas equipped as they
are.
